THE ROKAO PROCESS
The cocoa beans are fermented, dried, screened, and cleaned in Africa prior to shipment. Upon arrival, beans are inspected and sorted by a pass/fail quality standard. Beans are then cleaned again and roasted. These roasted beans can be sold without further processing.
